Chile Relleno Casserole


2 4oz cans diced chiles
1 cup jack cheese
1 cup cheddar cheese
1/2 cup each diced onion and green and red bell pepper
8 Eggs

Layer chiles in bottom of sprayed 9x13 casserole dish. Add cheese. Sprinkle in peppers and onions.
In a separate bowl beat eggs and add a tablespoon of ice cold water. Pour eggs over cheese. Bake at 350* for approx 45-50 minutes.

Eggs with onions and peppers




YUM! Healthy breakfast.

Slice onions and peppers so that you have a ring. Put those in the fry pan with a drop of OO. Fry on both sides. Scramble two eggs and pour into rings. Add one slice of chopped bacon to eggs. When cooked add mozzarella cheese and put under broiler until melted.
